It has to be acknowledged little is known about Orinoco, with research currently ongoing, but we do know these were produced by the Blemmerg Manufacturing Company in Boston and featured in George Winter’s book, ‘How to Mix Drinks: The Barkeeper’s Handbook’. It was in fact a full-page advert in this book which provided a missing piece of the jigsaw puzzle being completed for the drink’s program at The Dead Rabbit.
Gathering a host of recipes, botanicals and researching herbal medicine, we set to produce a bitter which paid homage to the original medicinal ailments they were purported to cure. Most importantly this also had to tie in with the flavour profile associated with Amargo Aromatico and their descendants, whilst adding a timely feel to the liquid. The end result, Dead Rabbit Orinoco Bitters, is brought to us by a host of botanicals, namely warm spices in the realm of cardamom and cassia bark, floral notes from chamomile, dried fruit flavors from raisins, fragrant aromatic bark like sandalwood and angostura, citrus oils from orange peel, and a bitter-sweetness from molasses.
